Anne Blair Brown (ABB). Most of us know Anne as artist extraordinaire (check out her website via the orange link), brilliant when it comes to anything art related, but did you also know that she’s an excellent cook? This woman can whip up healthy dishes that actually look and sound good! Every recipe she posts on FB/Instagram has me scrambling to run out to buy the ingredients – I see a cookbook in her future! Anne’s version of this recipe was prettier, she stacked her veggies like they were standing up. I tried but they slid down which is fine, they tasted AMAZING!
Anne, like me, gives more of a guide than a recipe with measurements most of the time. Add more of what you like, less of what you don’t. Make it larger or smaller depending how many people you are serving. And my note… don’t leave off the Panko breadcrumbs. They added the most awesome crunch and took this over the top – Thanks Anne!
I guessed at how many zucchini – there was enough for 4 servings as shown above, but it was so good we ate more of it. We served it with a grilled pork chop. Divine, I’m telling you! Click HERE to print the recipe as shown below:
