CSA Veggies and Recipes I made… 18# of fabulous veggies!

You’ve heard to eat all the colors of the rainbow for good healthy, right? It’s so true, eat all the colors you see!

About a month ago we purchased a CSA (Customer Supported Agriculture) Box from a local farm, Joseph Fields Farm on John’s Island (Charleston, SC). Eighteen pounds of veggies and strawberries too! In our box we received collard greens, kale, cabbage, broccoli, zucchini, yellow squash, carrots (sweetest I’ve EVER had), corn on the cob, sweet onion, red onion and tomatoes. The strawberries were a sweet treat that we washed and ate alone and on top of yogurt and cereal. Fabulous!

It was fun to come up with some different recipes to make with all these veggies. Here were the stars! The tomatoes we used a variety of ways, but one favorite was a sandwich with sliced avocado, red leaf lettuce, cheese and sliced tomato – then… GRILL IT! Whoa! Over the top fabulous!

Sautéed Collard Greens (out of this world!)

Baked Parmesan Zucchini Wedges (so tasty!)

Zucchini and Onions – we usually use angel hair (Barilla Plus) it’s wonderful with a little banana pepper as well!

Sautéed Cabbage (so much better than boiled!)
